Light teff semolina: fine semolina made from white teff (dwarf millet)
Teff semolina is ideal for making sweet dishes such as: semolina porridge, custard and cakes. Teff is also very popular as an energy source for athletes.
Recipe for semolina porridge (serves 2–3):
- 500 ml milk / plant-based drink
- 50–60 g light teff semolina
- 1 pinch of salt
- Sweetener to taste
Method for semolina porridge:
Heat the milk with a pinch of salt. Add the teff semolina, stirring constantly. Simmer over a low heat for approx. 6–8 minutes until the desired consistency is reached. Sweeten to taste. Remove from the heat and enjoy.
